I have a vested interest in being able to cook. Cooking has been a hobby of mine since I went off to college, although recently I haven’t been cooling as much.  Eating out has been too tempting.  I have had recipes published, such as my recipe for Italian sausage and peppers in the The Book Club Cookbook: Recipes and Food for Thought from Your Book Club's Favorite Books and Authors.

 

Present Day Cooking

I enjoy cooking Chinese, especially Szechwan and Hunan styles.  I like grilled Mexican and Southwestern cooking.  I’ve tried some Cajun, like Paul Prudhomme’s and Emeril’s cookbooks.  And I throw in an occasional traditional French recipe from my LaRousse Gastronomique.

 

My last dinner party was for the book club, the theme was Italian, and the menu was:

 

Fresh mozzarella and sliced beefsteak tomatoes with fresh basil, balsamic vinegar and olive oil

Grilled chicken and wild mushroom risotto

Grilled baby carrots, baby eggplant, and baby zucchini

Home-made ice cream in three flavors, pistachio, vanilla, and boysenberry

 

college dietary staples

French bread pizza – take half a loaf of French bread, slice in half lengthwise, and toast it in the oven (this makes the crust crispy).  Add Ragu Pizza Quick sauce, shredded mozzarella cheese, and your favorite toppings (mine are ham, onion, pineapple and jalapenos) with a little Parmesan cheese, Italian seasoning, and garlic salt.  Bake until the cheese is melted.  Cheap, quick, and good.

 

Tuna Helper – Keeps forever, you can stash it away and when you feel like a hot meal, you don’t have to go to the grocery store.  Hamburger Helper was better but then you had to have fresh hamburger, or thaw frozen.

 

Ramen Noodles – My favorites were the Chile flavor and the Shrimp flavor, and instead of making soup, you dump all the water after the noodles are cooked, and add the flavoring packets (ingredients: salt, MSG) directly to the noodles.  This is the ultimate college food, although my ex-roommate’s Dad bought him a case (I think around 20 packets) of Ramen just in case Y2K was serious, Chicken flavor.  I’m still eating them.  Quick and nothing is cheaper.

 

Spaghetti – any kind of pasta, any kind of sauce in a jar, add browned hamburger or Italian sausage.

 

Taco Bell – the best.  If you only had spare change, you could still eat at the Bell.
